# Expert Suggestions:

01 -
  • The contrast between crispy caramelized edges and tender cabbage hearts is absolutely addictive
  • It transforms a 2 dollar vegetable into something that belongs on a restaurant menu
  • The whole dish comes together in under 45 minutes with almost zero active prep time
02 -
  • Resist the urge to slice the cabbage thinner than 2.5 cm (1 inch) or it will fall apart during flipping
  • The feta needs to go on right out of the oven so it softens slightly without melting completely
03 -
  • Use a fish spatula to flip the cabbage steaks, it slides underneath without breaking them apart
  • If your balsamic glaze is too thick, warm it slightly in the microwave for easier drizzling
